AC72 - sail and helm trimming guide

As this boat is designed to be sailed using manual trim it would be great if some experienced skippers could share the technique for Gen and Spi on each point of sail.

I am told that maintaining HEEL between 8 and 10 is the goal and an AWA at 17 or so but I am sure there is more to it than that.

The boat seems to need to be close hauled for many points of sail when intuition would suggest otherwise.

Please help me understand the best way to skipper these hydroplaning / wing sail cats.
